Mid week check in

I've been thinking about setting a goal for myself. I need something to shoot for. I know myself well enough that I need to get a goal in mind. Something to reach for and to work towards.

So, I think I've found a goal.

We're going home on leave in roughly 52 days.
I would like to lose 20 lbs in 52 days.
I know its a long shot, but I think I can do it. that's roughly 3lbs a week for 7 weeks.

I've been reading a lot of blogs, articles, magazines, books, etc on weight loss/healthy eating lately. I actually bought 2 books from the BX last week:

I think I'm going to start posting my meal plans and get everything down.
That way its all accountable.
Tomorrow I'm going to weigh myself.
I'm a little nervous about it.

My FIL was in town for the last 4 days. I've haven't seen so much red meat in I don't know how long.

Saturday - Steaks for dinner
Sunday - Prime rib for fathers day
Monday - Burgers at Great America
Tuesday - Philly Cheese Steak Sandwich for lunch.

Granted each day I tracked my calories, and I've been at my calorie limit. Except for Tuesday, I was over by 140.
So, I hope I've lost some weight. But I'm not going to be surprised if i haven't.
I'll let you know how it goes.

Tonights Dinner

Potato Chowder

Quick Corn and Potato Chowder

2 cups water
2 cups milk
2 medium yellow/white/red potatoes (skin on- chopped)
1 can corn- drained (yes, CANNED CORN! ZOMG!)
1 chicken boullion cube
sea salt, black pepper, basil, onion powder, celery salt, smoked paprika
corn starch & water (it's better to mix the corn starch in water first & then use it to thicken)

(we also added real bacon bits and obviously didn't add the corn)

In a medium saucepan: add the water & boullion cube- cover & cook the potatoes until tender (about 15 min or so)
turn the heat down to medium low & add the corn & milk (don't drain the potatoes because the starchy water will add flavor & thickness)- mix & then add seasonings to taste (not too much, no need to overwhelm, but make sure to use plenty of salt & pepper)

Allow the chowder to simmer for about 5-10 min- while it simmers, add the corn starch (to desired thickness)
Remove from heat & ladel into bowls- NOM NOM!!!

p.s. you can top with cheese or bacon or whatever you want- i just keep it simple :) [We added cheese to the top)

Cheddar Biscuits
Biquick Mix
3/4 cup shredded cheddar cheese
Follow the directions on the Bisquick box- add the cheese into the mix & plop them on a greased baking sheet (usually not greased but cheese requires grease people!)
Bake for about 10 min- butter & eat! YUM!

OMG! TO.DIE.FOR!!! I would eat my weight in these and then marry them if i could.

Thank you T.Bird. If you weren't already married and a mom i'd as you to marry me and be the mother of my children

Adventures in lasagna

So I know it's so so silly. but, I've never made lasagna. I know, weird right?

So one day we FINALLY got some cooler weather so i figure why not make some comfort food. So I called my mom (queen of the lasagna) and asked for some advice. I know the basic idea of lasagna.

sauce, noodles, cheese, sauce, noodles, cheese. I get it. lol. but its the ingredients that go into the sauce, noodles, and cheese that make it or break it.

And so it starts. I Got everything out and got it ready.
I love me some ricotta Cheese. love love love.
Then I added in the spices. To be honest. I just added stuff that looked like it should go in lasagna. I couldn't tell you exactly how much or exactly what it was. but I would add, taste, adjust. And so on until i liked the mixture. It worked out pretty well.
This is B cooking up the ground turkey to go in the lasagna. He wouldn't stand still long enough for me to get a decent picture. Believe it or not after 5 tries this IS the best one. lol.
After i got the spice mixture right i added shredded mozzarella and mixed it all up.
I bought the Non-boil noodles. I was really nervous about over cooking the noodles, so i decided this was the safest bet.
The layering begins...
I had some difficulty getting the cheese to spread evenly. I'm not sure why but it was really difficult.
Ready for the oven.
Following the directions on the noodle box, it says to put tinfoil over it until 5 min before it is supposed to be done. Then take the foil off and let it cook for another 5 min to let the cheese melt up.
I think it worked pretty darn well.
Fresh out of the oven!!

I think it turned out pretty darn well!!! Brian's only suggestion was to have more sauce next time. Which i agreed it needed a bit more sauce. I only used one jar, and it didn't look like it had enough. but i really liked it. I really really did.

mmmmm.... ground turkey lasagna.
Not bad for my first time! lol!

Interesting Find

Have You seen these before????
Chester's PuffCorn - Cheese Flavored.
I went to the corner store on my break to get a Coca-Cola Zer0 (my new love BTW). And i saw these. And i was thought "eh, 2$? I can do that", so I bought it. Its a HUGE bag, so i shared. Its interesting. Its like popcorn, but what popcorn would be like if it was on steroids and shaved.
They're big gigantic 'puffs'. They have the same texture as popcorn, but there's no fear of biting into the kernel, and it doesn't get stuck in your teeth or on the roof of your mouth. I got the cheese flavor, they're really good. and only 160 calories isn't bad. My co worker says "I bet they're mostly air." O they are, if by air you mean Awesomeness. They have a texture that takes a little getting used too, but ya. I thought i would share this kernel of awesomeness with you. lol.

Okay, how about a good update!!

So Happy Wednesday (or Hump Day as i like to call it)!!

Day #1 (08/11) - I decided that because i didn't have groceries, that i could eat whatever i wanted for lunch. So i had Taco Dell Mar. mmmmmmmmm. Mondito Burrito! anywhozer, I did go to the gym. My abs were still sore from my drill weekend PT Test, so i just did 35 min of cardio on the stationary bike and read my book.

{side bar} remind me later to catch you up on my recent reads! K? K!

After i got home, we went to the store and we got a lot of healthy foods. A lot of good things to eat and snack on.

That night, B made his classic home made calzone with ground turkey, a bunch of veggies and a tiny bit of cheese. lol. I love cheese, thats why he makes it. because if i made it it would be 96.5% cheese and 3% meet and .5% veggies. lol.

Day #2 (08/11) - I had a good start to the morning. I started with a Carnation Instant Breakfast, A chewie (90 calorie) bar, and a cup of coffee (home made, not starbucks).

For lunch i had a smart ones pasta with left over turkey and 2 plums.

For Snack i had a handful of the Healthy Pringles and only 1 coke for the day (HUGE DEAL!!). I Love Me some coke. Today i need to go to the Market and get some Coke Zero, not as good, but better than nothing.

We had bowling, so I didn't go Work out. But B did Make us dinner! We had Steak and Rice.
P.s. I FREAKING LOVE RICE!!! i'm weird, i know, but i seriously could eat an entire meal made of rice, but it has to be good rice. that whole minute rice shit reminds me of basic traning, not so tasty.

So i'm going to have a steak sandwich with the left over steak and rice as the side today for lunch and to tell you what, i'm WAY excited! lol!! WAY!

But now its time to pack my gym bag, make my coffee, pack my lunch, and get my happy ass to work.

Have a happy wednesday ladies!!!

Obsession Tuesday - Sweet Tea Addition

So i'm in love with starbucks iced black sweet tea. but my love for it is getting expensive. so i'm looking for a way to make it at home.

I'm also looking for a new tea pitcher and a new sun tea pitcher. we have a good balcony for sun tea. but sun tea is almost fool proff. tea bags, water, container, and sun. POOF! sun tea. but its the sweet tea that i'm curious about. this is like my holy grail of drinks.

Now i know for a fact i know NOTHING about making a good cup of sweet tea. So i went to my trusty friend google. and i found 2 recipies that look interesting. Both are from GRITS.

What do you guys think? help a yankee out!

Recipe #1 Southern Sweet Iced Tea

Ingredients
3 Family size tea bags
2 Cups of cold water
1 Cup of sugar

Directions
We in the south make the best iced tea you'll find. Maybe it's how it's done, or maybe it is the water in the south, or maybe it's just that a southern belle has put a lot of TLC into making the tea. Who knows!

We recommend Luzianne Tea Bags if available.

Place the two cups water in a pot and add the tea bags. Bring to a boil, do not continue boiling. Remove from heat and let steep. Pour warm tea into empty pitcher. Add the sugar and stir until the sugar is dissolved. Fill remaining pitcher with cold water.

Optional - some women say they use less water and add ice to the tea.

Recipe #2 Southern Sweet Iced Tea

Ingredients:
3 Family sized tea bags
a pinch baking soda (about 1/4 teaspoon)
1 to 1 1/3 cups of sugar

Directions:
Here is my never fail sweet tea...
Everyone (even yankees) loves it.

Bring 3-4 cups of water to a boil. Add a pinch of baking soda to the water and add 3 family sized tea bags. Remove from heat and cover. Allow to sit for at least 10-15 minutes. Pour into gallon pitcher and add sugar. Then fill with cold water. Refrigerate.

*the soda takes out the bitterness and darkens the tea....this small amount doesnt change the taste.

Enjoy!!

Confession Friday.

so today's friday confession will be a little scatterbrained. Due to the fact that i've been every where and done lots of things this week, its been a little crazy. I'm going to be a bit all over the place. but i'm including pictures. so why the heck not. haha.

~ I missed this dude more than i care to admit. and i'm so glad that he didn't turn in to daddy's boy and is still my little man. of course i'm talking about my puppy sammy

~ I'm also really glad my husband didn't changed to much while i was gone. Everyone grows and changes. but i was TERRIFIED he'd be someone i didn't know when i came home but he's not. He's still the man i fell in love with

~ Because i've been in 2 sets of uniforms for the past 150 or so days i've become obsessed with clothes and shoes and accessories. I like bags. but i normally keep 1 main purse that's plain and black. that way i don't have to change it when i go on base and back in uniform.

~ I've thrown away at least 5 garbage bags FULL of clutter from around the apartment since i've been home. between tattered clothes, old socks, stuff i've kept cause i "though i would need it", etc.

~ I plan on cleaning a lot more

~ Driving here now makes my anxiety shoot through the roof.

~ I can't wait to get into an art class again. I really enjoyed it and learning how to improve in places and how to do new things.

~ I'm seriously so OCD, i'm already starting to rework my planner. I went out and bought new inserts and new calender and i'm now updating it though... oh December. lol.

~ I find doing my planner, and color coding it and blocking out times oddly soothing.

~ I still can't poop regularly here.

~ I've been home 7 days exactly now. and I've missed 2 days of going to the gym. today is one of them because we slept in till 11. oops.

~ i have to go to my civilian job and talk to them. but I'm really not looking forward to it.

~ I wish B would find a job... NOW. so i wouldn't have to go back to work.

~ Finding things i "put away" before i left is proving increasingly difficult.

~ I'm so happy to be home! so so happy!

(this is taken with my cell phone looking out the window from my spot on the couch. So beautiful!)

Just in time for lunch

My printers are back up...
just in time for me to clock out for lunch.

So here's my story from last night.

I ruined dinner.
seriously it was not edible.

we went to the store and got groceries for dinner and for lunches.
a good 108.00 later we're home

i made my husbands latest favorite: baked chicken, potatoes, carrots, onions, and celery.

well i for got to get the seasoning packet from the store. So i thought hell, why not i'll just make it myself. WRONG!!!!!!!!! wrong, wrong, wrong... wrong wrong!!!

i mistakenly gabbed.... chipotle CINNAMON spice. who the eff puts those 2 together?!?!?! who does that.

it smelled good till i opened the cooking bag. then it smelled.... 'off'. so i made it how i normally would and made B come in and try the gravey. He seriously GAGGED! i've never had my husband gag over something i made before this.

........ i cried. i bawled!

B ordered my favorite pizza to make me feel better. but i felt so bad.
suck!!

Homework - Work - Diet - Still no life

So i'm taking a break from my fucking mountain of homwork to listen to my playlist and post a new blog. Its been a while. I seriously need a break. I need a life, I need to be done with school.

-School-
I'm about half way into my summer term. Its seriously draining the life out of me. I love my major, I love the informaiton, its interesting... but going to school year round is really taking a toll on me. i don't know if its the summer term, the condinsed classes, or the fact that we actually have had a couple days of no rain and all sun. but its getting harder and harder to concentrate. I try harder and harder but it gets worse and worse.

Next term i'm only taking 2 classes, but still its 3 nights a week. so we'll se how it goes. wish me luck.

-Homework-
sucks. seriously sucks.
did you know that the history of furniture isn't as cool as it sounds? actually it sucks some serious assness!
but i'm trying my best to get through it. we'll see how it goes.
But i know B and i will get into it over me printing to much. but he'll just have to get over it. lol.

-Work-
So i started my new job on Monday. I really like it. Only one week in and its already drama filled.

C= girl who i'm taking over for when she leaves, she's training me
BBBM = Big bad boss man of awesomness
D= Momma D, second in charge, pure coolness
M= Flakey coworker of doom, soon to be gone ::crosses fingers::
Co= Drama filled front counter worker, also Big Bad Boss Man's daughter.

i'll get into it later. but those are the main players

-Diet-
well its not really a diet, more like a life change. I'm trying to get back to eating healthy, less junk, more fruite and veggies, more water, less soda.

I used to crave sugary snacks, but now with the invention of 100 calorie packs, i really don't crave those to much.

now its Soda. Diet Coke to be exact. must choke down this water. stupid stupid water
